anyone no a good one? im just looking for pointers on casing, spices that you can mix in with deer meat and make a good braut..anyone?

You could try to look up one of the [I]Bowcountry Journal [/I] issues...TxHunter did three pieces on making sausage, I believe. I think the last issue might be the one with the recipe details you want, but I don't remember. It's also possible that the article he did that would be most helpful to you didn't get published. If that's the case, I could probably dig it up and post it if TxHunter doesn't pop his head up here soon.

my grandpa was from poland, he used to make homemade sausage that was out of this world ..everyone wants to no what happen to the recipe..
polish sausage..the polish just didnt no how to screw in a light bulb..

I use a HiCountry kit...it's pretty handy as you get the spice packets, casings, any cure needed and good clear instructions in one box. Most are set up to make 30-35 lbs of product with each kit...but in the directions they tell you exactly how much to use if you only want to make in 5 lb increments. It keeps it all quite simple as compared to mixing and matching (which I've done also).

What ever you do, make plenty as it really disappears. (We discovered that our little 15 year old the baby sitter, can really put a dent in the cajun sausage we made with antelope - she couldn't be 90 lbs soaking wet...but she sure eats!)

I read a news article up here recently discussing an urban deer hunt which quoted a hunter as saying you could get [B]150 pounds of meat from one deer[/B].

I thought to myself, "Sign me up!"

I agree 35 lbs is a large amount, but as I mentioned, the instructions give you a break down chart for 5 lb increments...I just made some sweet Italian sausage from one of their kits last week and I think it called for 2 tablespoons of spice per each 5 lbs. Or, if you made the whole 35 lbs you would just use the whole spice packet which looked to be about a two cups.

Anyway, if you're interested just go to their website and you can see it all. If you go to the web site and go to the drop down menu "From the Kitchen" then click on "Lost your spice instructions"...scroll down thru the directions and you'll see a chart that breaks it all down.

Like I said, the only reason I like it is beacause their products taste great, and everything you need is in that one kit...it's simple and it's all there, no chasing down this or that.

We must be sausage pigs tho...because I always make up the whole 30 lbs. +/-....

Well, elk and moose are both species of deer, so you might want to check out the fine print first.

No elk or moose here...Though you can get Moosehead if you know where to go and are willing to pay for it...But the inflatable reindeer are starting to come out now...Perfect if you're looking for a light winter snack....

If TxHunter ever pokes his head up around here again, maybe he can tell me/us if there's something else I should go looking for.

I thought his articles were very informative.


Wild Bob, do you have a recommendation on a good kit or spice package for summer sausage for deer (whitetail, LOL)? Any reason you wouldn't use one of HC's? I see their kits for western animals and beef but nothing for venison (whitetail deer venison, :-)).
