Little brown girl dog - 2 Squirrels - 0 Despite her clear desire for me to smoke this one (that's where she left it) I decided to give the Instant Pot a shot at it instead. After a little salt, pepper and Italian seasoning and 10 minutes at high pressure in a cup of chicken stock this full-grown fox squirrel was as fall-off-the-bone tender and delicious as after 16 hours of sous vide. I have a pressure-cooker method for squirrels that I like a lot, but I can't compete at all with a 10-minute cook time. Plus there's always the risk that I blow a hole in my ceiling ... LOL

The total cooking time is actually slightly more than 10 minutes, as it takes a few minutes to come up to pressure...which is when the timer starts.

Quite the opposite. They're more popular now than ever, owing mostly to the Instant Pot (and other makes that basically do the same thing). Between greatly enhanced safety features and the "set and forget" functionality provided by the built-in electronics they're so much easier...and safer...to use now that they're even trendier than sous vide cookers. Well.. I meant the traditional pressure cookers with a rocker and anti-explosion gasket ...

Well, those *exact* types have been pretty much phased out, yeah. But they've been replaced by improved versions that are still stove-top models, but with enhanced safety versions (better pressure valves, locks that prevent you from opening while they're under pressure, etc.).
