My wife's brother-in-law called last night because he got it in his head that he wanted to try ground beef brisket hamburgers. But he doesn't have his own grinder and he's had some problems stemming from spinal surgery, so he can't drive or do anything strenuous. So he wanted to know if I wanted to split a brisket and, since I'd have to do the work, he'd cover my half of the cost. But I haven't gotten to play with the grinder in a while and this seemed like a good reason to do drag it out, so I told him we'll just split it because I enjoy doing this stuff. And, man...I'd forgotten how much I love this machine. 10.5 lbs of brisket turned into finely ground beef in less than 5 minutes:



'Course, slicing the brisket into strips, sticking it in the freezer for 30 minutes, portioning my half into vacuum freezer bags and cleaning everything up took considerably longer...as will driving half-way to Oklahoma (that might be a slight exaggeration) to drop off his share. So he and my sis-in-law are going to feed us burgers out of their cut. I'll report back with the results.

OK...very tasty, with a more intense "beefy" (for lack of a better term) flavor than ground chuck/round/sirloin. It was a bit fatty though, maybe 75/25...so I might trim a bit of the fat out before grinding next time. But all-in-all, I like it, and I think I'm going to try smoking the burgers I make from my half.

Oooh! Smoked burgers! That sounds good.

Actually, all sorts of possibilities open up with this brisket idea.

I like to put some Italian sausage in burgers, in something like 1/4 or 1/3 proportion. It would be better if the grinds of the two meats were the same, but my hand grinder is long gone to parts unknown.

Hmmmmm...that sausage idea has merit. Maybe I'll experiment with that next time.

I forgot to mention that our microwave oven is haunted, and that the spooky bastard is constantly taking our pictures. I'm just too cheap to hire an exorcist.
