I look forward to this time of year like a kid looks forward to Christmas. Almost as much as I look forward to the opening weekend of hunting season. I always wanted to make it to one of the big crawfish festivals but it doesn't work out with turkey season. JB promised I'd meet a pretty Cajun girl if I visited, but after putting the idea in my head, he dropped out of the forum...

Old Bay is for yankee seafood boils. Cajun crawfish boils involve a boat-load o' bugs (purged in clean water beforehand, of course) added to a big ol' pot of water that's been boiling with the aforementioned new potatoes and corn, but also onions (yep, that's what you see in the pic), a bunch of garlic cloves, andouille sausage, lemons and some liquid/powdered flavorings/spices. Some people also toss in extras like mushrooms, but I like to stick to the basics. As for the flavorings/spices, there are as many variants on that as there are Cajuns, but the most common (and my favorite, as it produces a good result AND is quite easy) is to use a combination of liquid and dry boil additives. My choices for those two are:

Although to be fair, you can find it in plenty of kitchens here, by which I mean---from personal experience--from Richmond to Savannah. It's an east coast thang...LOL...Nowadays, anyway.

Back in the day, I think my New Orleans friends were about evenly split on using Old Bay or something else. That's my recollection, anyway. I remember one homemade mix (don't ask me what was in it besides the usual, just in different proportions) and some prepared Old Bay alternatives. Maybe Zatarains, maybe not.

Squeezed lemons, corn, potatoes and definitely onions.

Sometimes you get other stuff in a seafood boil, like mushrooms, but don't remember seeing them in an authentic Louisiana crawfish boil. That I can remember anyway.

It's a bit of a production to get crawfish here, so I'm sure there are lots of things that other people do that I have no idea, LOL.

The problem with Old Bay for a bug boil isn't that it lacks flavor (or has bad flavor), it's that it lacks anything even remotely approaching the heat required for a Cajun character. You could certainly use Old Bay and then add your own cayenne (or other preferred heat source) to the mix. The Zatarain's boils already include that, so it's just easier. On the other hand, Old Bay does include some paprika (though it's dead last on the ingredients list, so it's probably not much), so if you find your boil lacking in that department you could add some. In fact, now that I think about it...I think I'm going to toss in some smoked paprika to my next boil (I buy it in bulk for chili anyway, so I always have plenty on hand).

Well, I guess now I can't use my 3-Sepia joke that I had up my sleeve waiting for the right opportunity...Unless maybe I get 3-Sepia involved in stirring the cookpot...That would free up at least one human to drink more beer, thus taking a bit of the sting out of our conquest by the machines...

Too much. $9.99 / lb at this place, though I can get them for $7 or so elsewhere (they just don't have their supply in until this weekend.)

So, I forked out $20 to start the season off. But I don't care...they put a smile on my face. Well, that and a bunch of boil.

But that might be a good thing. I've seen $10 biscuits-and-gravy and $16 bowls of seafood gumbo served to people who you would think should know better.

I think I might hit up my grocery store again and see if they can get me some. They weren't willing to do it a few years ago. The big farmers' market isn't a big help, plus it's a project to get there. The two best seafood markets near me don't handle them, or if they'd be willing, I haven't talked to the right people yet.

I've bought some by mail a few times, but not in the last couple of years. I think I was looking at something around $7/lb for 10-15 pounds and under $6 (or maybe even 5) at 30 lb. That was live, field run (unrinsed). I remember a fairly painful air freight charge on one order, but more recently shipping wasn't horrible. I mean, all things considered. They are sending you tasty crawfish, after all! LOL

I would imagine that shipping them that far from LA is what drives the bill up so high (we can usually buy 35 lb bags of live ones for about $3.50 / lb here, and they're readily available at several grocery store chains, fish markets and places that specialize in almosr nothing but crawfish). Hopefully, if you can find them, the low price of fuel this year will take some of the wind out of the price.

I haven't shipped anything substantial for a while, but I'm guessing the ground carriers also haven't dropped their fuel surcharges (yet?).

Still just a little chilly to do it at night. At least for me. I'm not one of those people who likes to sleep cold. At least not when I have a perfectly good house with some type of heating system around me. Camping is different, LOL.
