Nothing like a fresh fish fry in the summer time!

Last week it was my son's Birthday and for his birthday dinner he wanted a fish fry so I had to oblige... My wife made up a nice fresh cole-slaw (not pictured!) and I fried up a smattering of northerns, walleye, homemade hushpuppies and fries. A nice ice cold IPA rounded it out and made it a meal fit for a king. Good stuff. :tu:

My favorite batter for this type of a fish fry is: Flour, ice cold water, black pepper, Old Bay seasoning and an egg. Just mix it up good then chill to almost freezing, key to good crisp fish breading that isn't soggy is using nice hot oil (I like to get it up to that 380-400 degree range, and dip the dry fish (no water on it!) into that ice cold batter, then fry it fast. And don't over crowd the pan...leave plenty of room for each piece of fish to fry quickly.

Any other favorite fish batters out there???

I like a little cornmeal mixed with the flour. Gives it a little crunch.

I could tell you, but then I'd have to kill you....Maybe I'd consider it if you spill your hushpuppy recipe as a gesture of good faith...


You can see this is like the Iran nuclear deal, where I get everything I want and you light up the White House in rainbow colors....LOL

1 cup Bisquick and 1 cup flour 2 tablespoons baking soda, 3 tablespoons Peprika
Pat dry fish after cleaning, dust with flour,dunk into egg and milk bath, then a thick coat with breading mix.

Old Bay seasoning is great stuff to use as well:tu:

Sounds like you've been hanging out with those Louisianan Gumbo cooks...
