After the discussion we had on cheesy grits a few weeks back I got a hankerin so had to make up a batch.

Shrimp and grits is a southern classic for which there are as many versions as there are southern cooks. Just Google "Shrimp and grits" and "recipe" and pick one that sounds easy and good. My personal favorite is a variation that is done by a local gulf seafood place that involves pan-baked grits covered in shrimp gumbo. The bottom of the grits get a slightly crunchy texture from contact with the oiled pan they're baked in, and the gumbo is outstanding even on its own. Combine the two and its to die for. When its not crawfish season the grits-and-gumbo is my go-to order. Speaking of which...here are some friends I invited to the house on Saturday. If you REALLY want to live it up, bury a decent pan-seared or grilled steak under your shrimp and cheese grits...After that I'm pretty sure you'll need a nap, LOL...
Use a bit of lime in the marinade or wherever else you might see an opportunity. It kinda kicks the surf n turf thing off really nicely... 6.) DParker - 04/21/2014

That sounds worth trying. One of the best things I've ever eaten was a Cajun blackened slice of prime rib covered in a creamy crawfish sauce at a little place in Biloxi, MS. I was hesitant at first because prime rib is one of those things that I tend to be a purist about. But it sounded so outlandish that I was compelled to give it a try. Yeah, at first blush I don't like to drown a piece of good meat in a sauce...Did I ever tell the story about the froggy white sauce I found all over my uptown rabbit medallions one time? :wink
